  1. BONDST

    NoHo · 6 Bond Street

    BONDST opened on Bond Street in 1998 and remains one of New York's durable social machines. The brownstone unfolds vertically: lounge downstairs, the louder main dining room and sushi bar above, then another dining room and the Tatami room further up. The food plays loosely with Japanese cuisine, placing sushi and sashimi beside tuna tarts, crispy rice, sauces, cocktails and dishes people began ordering years ago. Fashion people, downtown people, people trying to become downtown people, dates, birthdays and beautiful strangers at the bar continue filling the rooms. The clientele changed hairstyles several times; BONDST remained useful.

  2. J.G. Melon

    1291 Third Avenue, New York, NY 10021

    In 2021, J.G. Melon temporarily stopped serving its cottage fries because of supply problems. People created a petition. The fries came back. This tells you almost everything required about J.G. Melon. Jack O'Neill and George Mourges opened the Upper East Side tavern in 1972, and remarkably little about the essential arrangement has required improvement since: dark green walls, watermelon pictures everywhere, gingham tablecloths, a worn bar, burgers coming off the griddle continuously and a crowd split between people who have been coming for decades and people who have been told they need to see what the fuss is about. The cheeseburger is small, straightforward and almost comically unequipped to carry the mythology attached to it. Good. Its importance comes partly from repetition, the same order, the same room, the same corner, year after year until a hamburger becomes part of the neighborhood's memory. New York loves replacing things. This one has resisted. Do not customize civilization unnecessarily.

    Marea is one of those very New York restaurants that feels completely at home on Central Park South. Polished, elegant, serious service, and a menu built around Italian seafood and pasta. Go for crudo, fish and whatever pasta looks best that day. The room is refined without feeling stiff, and it works especially well for a long lunch or dinner when you want somewhere that feels properly New York.
