# Amsterdam

> Amsterdam’s restaurant culture is strongest when it resists performance. The city’s memorable rooms tend to be compact, socially porous and embedded in the rhythm of their neighborhoods: a Cantonese institution on the Zeedijk, a rooftop conceived as a shared living room, a French brasserie in De Pijp, a market stall turning Mexican food into a form of cultural transmission. The selection is international because Amsterdam is international, but the best places still acquire a distinctly local scale, informal, close together and easy to fold into the rest of the night.

## City thesis

## Essential selection

### Nam Kee
*Institution*

- Canonical place ID: amsterdam--nam-kee
- Canonical source: https://jpthcorner.com/destinations/amsterdam#place-amsterdam--nam-kee
- Destination: Amsterdam
- Place type: restaurant
- Publication status: published
- Editorial status: unmarked

Nam Kee is not simply a Cantonese restaurant but part of the social and culinary history of Amsterdam’s Chinatown. Its value lies in continuity: an institution whose plainspoken dining-room culture has endured while the surrounding city became more polished, expensive and self-conscious.

### Bird Thai
*Institution*

- Canonical place ID: amsterdam--bird-thai
- Canonical source: https://jpthcorner.com/destinations/amsterdam#place-amsterdam--bird-thai
- Destination: Amsterdam
- Place type: restaurant
- Publication status: published
- Editorial status: unmarked

Bird belongs to the Zeedijk as much as it belongs to Thai cooking. Its long-running presence, generous scale and unembarrassed directness make it part of the street’s dense Asian restaurant ecology.

### Salmuera
*Carries the evening*

- Canonical place ID: amsterdam--salmuera
- Canonical source: https://jpthcorner.com/destinations/amsterdam#place-amsterdam--salmuera
- Destination: Amsterdam
- Place type: restaurant
- Publication status: published
- Editorial status: unmarked

Salmuera turns the broad territory between Argentina and Mexico into a dark, exuberant dining room organized around fire, meat, mezcal and the momentum of a long evening. Its importance is atmospheric as much as culinary: this is not Latin American food presented as ethnographic precision, but as urban nightlife, generous, smoky and deliberately theatrical.

### Tacoteca
*Point of view*

- Canonical place ID: amsterdam--tacoteca
- Canonical source: https://jpthcorner.com/destinations/amsterdam#place-amsterdam--tacoteca
- Destination: Amsterdam
- Place type: restaurant
- Publication status: published
- Editorial status: unmarked

Tacoteca is one of the most conceptually important entries in the selection. It places Mexican street food inside Amsterdam’s market culture rather than translating it into a conventional polished restaurant. Food, music and social exchange are equally central to the project.

### Zoku
*Point of view*

- Canonical place ID: amsterdam--zoku
- Canonical source: https://jpthcorner.com/destinations/amsterdam#place-amsterdam--zoku
- Destination: Amsterdam
- Place type: hotel
- Publication status: published
- Editorial status: unmarked

Zoku is not best understood as a restaurant. It is a hospitality environment built around the idea of shared domestic space: communal tables, open work areas, rooftop greenery and a kitchen integrated into a broader social system. It dissolves the distinctions between hotel, workplace, residence and restaurant.

### Jazz Café Alto
*Institution*

- Canonical place ID: amsterdam--jazz-cafe-alto
- Canonical source: https://jpthcorner.com/destinations/amsterdam#place-amsterdam--jazz-cafe-alto
- Destination: Amsterdam
- Place type: jazz-club
- Publication status: published
- Editorial status: unmarked

Jazz Café Alto matters less for polish than for persistence: a narrow, late-night room where live performance remains the central fact, resistant to the city’s increasingly designed nightlife.

### Sichuan Restaurant Amsterdam
*Specialized room*

- Canonical place ID: amsterdam--sichuan-restaurant-amsterdam
- Canonical source: https://jpthcorner.com/destinations/amsterdam#place-amsterdam--sichuan-restaurant-amsterdam
- Destination: Amsterdam
- Place type: restaurant
- Publication status: published
- Editorial status: unmarked

Sichuan represents one of the most convincing strands of Amsterdam’s international dining culture: a restaurant whose identity is built around regional specificity rather than a generalized idea of Chinese food.

### Mangia Pizza & Wine da Antonio
*Specialized room*

- Canonical place ID: amsterdam--mangia-pizza-wine-da-antonio
- Canonical source: https://jpthcorner.com/destinations/amsterdam#place-amsterdam--mangia-pizza-wine-da-antonio
- Destination: Amsterdam
- Place type: restaurant
- Publication status: published
- Editorial status: unmarked

Mangia belongs to the guide less as a fashionable pizzeria than as an example of Amsterdam’s ability to absorb a highly specific regional tradition without domesticating it. Built around wood-fired pizza and an explicitly Italian identity, it offers a directness that many more designed restaurants struggle to achieve: flour, fire, wine and very little conceptual interference.

## The Amsterdam edit.

### Institutions of the city

### Nam Kee

- Canonical source: https://jpthcorner.com/destinations/amsterdam#place-amsterdam--nam-kee

Nam Kee is not simply a Cantonese restaurant but part of the social and culinary history of Amsterdam’s Chinatown. Its value lies in continuity: an institution whose plainspoken dining-room culture has endured while the surrounding city became more polished, expensive and self-conscious.

### Bird Thai
*Institution*

- Canonical place ID: amsterdam--bird-thai
- Canonical source: https://jpthcorner.com/destinations/amsterdam#place-amsterdam--bird-thai

- Place type: restaurant
- Publication status: published

Bird belongs to the Zeedijk as much as it belongs to Thai cooking. Its long-running presence, generous scale and unembarrassed directness make it part of the street’s dense Asian restaurant ecology.

### Jazz Café Alto
*Institution*

- Canonical source: https://jpthcorner.com/destinations/amsterdam#place-amsterdam--jazz-cafe-alto
- Destination: Amsterdam
- Place type: jazz-club

Jazz Café Alto matters less for polish than for persistence: a narrow, late-night room where live performance remains the central fact, resistant to the city’s increasingly designed nightlife.

### Restaurants that carry the evening

### Salmuera
*Carries the evening*

- Canonical place ID: amsterdam--salmuera
- Canonical source: https://jpthcorner.com/destinations/amsterdam#place-amsterdam--salmuera
- Destination: Amsterdam
- Place type: restaurant
- Publication status: published
- Editorial status: unmarked

Salmuera turns the broad territory between Argentina and Mexico into a dark, exuberant dining room organized around fire, meat, mezcal and the momentum of a long evening. Its importance is atmospheric as much as culinary: this is not Latin American food presented as ethnographic precision, but as urban nightlife, generous, smoky and deliberately theatrical.

### MR PORTER
*Carries the evening*

- Canonical place ID: amsterdam--mr-porter
- Canonical source: https://jpthcorner.com/destinations/amsterdam#place-amsterdam--mr-porter
- Destination: Amsterdam
- Place type: restaurant
- Publication status: published
- Editorial status: unmarked

Set above the city, MR PORTER collapses the steakhouse, rooftop restaurant and late-night lounge into a single highly controlled environment. It is less an expression of local intimacy than of Amsterdam’s cosmopolitan hospitality machine: a room built around spectacle, social energy and the frictionless transition from dinner into nightlife.

### IZAKAYA Asian Kitchen & Bar
*Carries the evening*

- Canonical place ID: amsterdam--izakaya-asian-kitchen-bar
- Canonical source: https://jpthcorner.com/destinations/amsterdam#place-amsterdam--izakaya-asian-kitchen-bar
- Destination: Amsterdam
- Place type: restaurant
- Publication status: published
- Editorial status: unmarked

IZAKAYA is an Amsterdam artifact of the global luxury-restaurant era: Japanese technique, South American accents, a hotel setting and a room designed to blur dinner with nightlife. It represents a version of the city that is international, socially performative and deliberately detached from the modesty associated with traditional Dutch dining.

### Brasserie Lolita
*Carries the evening*

- Canonical place ID: amsterdam--brasserie-lolita
- Canonical source: https://jpthcorner.com/destinations/amsterdam#place-amsterdam--brasserie-lolita
- Destination: Amsterdam
- Place type: restaurant
- Publication status: published
- Editorial status: unmarked

Brasserie Lolita is a contemporary Amsterdam interpretation of the French brasserie, shaped as much by mood as by culinary reference. The room combines French codes with a more polished, international social sensibility, making it less a reproduction of Paris than a distinctly Amsterdam fantasy of Paris.

### Specialized rooms

### Mangia Pizza & Wine da Antonio
*Specialized room*

- Canonical place ID: amsterdam--mangia-pizza-wine-da-antonio
- Canonical source: https://jpthcorner.com/destinations/amsterdam#place-amsterdam--mangia-pizza-wine-da-antonio

### The Seafood Bar
*Specialized room*

- Canonical place ID: amsterdam--the-seafood-bar
- Canonical source: https://jpthcorner.com/destinations/amsterdam#place-amsterdam--the-seafood-bar
- Destination: Amsterdam
- Place type: restaurant
- Publication status: published
- Editorial status: unmarked

The Seafood Bar represents a polished, scalable version of Dutch seafood culture. Its appeal lies in clarity rather than invention: a bright, metropolitan seafood house that makes fish and shellfish feel accessible without stripping them of ceremony.

### Sichuan Restaurant Amsterdam
*Specialized room*

- Canonical place ID: amsterdam--sichuan-restaurant-amsterdam
- Canonical source: https://jpthcorner.com/destinations/amsterdam#place-amsterdam--sichuan-restaurant-amsterdam
- Destination: Amsterdam
- Place type: restaurant

Sichuan represents one of the most convincing strands of Amsterdam’s international dining culture: a restaurant whose identity is built around regional specificity rather than a generalized idea of Chinese food.

### Concepts with a real point of view

### Pesca

- Canonical place ID: amsterdam--pesca
- Canonical source: https://jpthcorner.com/destinations/amsterdam#place-amsterdam--pesca
- Destination: Amsterdam
- Place type: restaurant
- Publication status: published
- Editorial status: unmarked

Pesca converts seafood selection into a staged process, placing market logic, display and participation at the center of the room. It belongs in the guide as an example of Amsterdam’s appetite for hospitality concepts that make the mechanics of dining visible.

### Tacoteca
*Point of view*

- Canonical place ID: amsterdam--tacoteca
- Canonical source: https://jpthcorner.com/destinations/amsterdam#place-amsterdam--tacoteca

Zoku is not best understood as a restaurant. It is a hospitality environment built around the idea of shared domestic space: communal tables, open work areas, rooftop greenery and a kitchen integrated into a broader social system. It dissolves the distinctions between hotel, workplace, residence and restaurant.

## Amsterdam

Amsterdam is almost offensively pretty. You walk out of Centraal and it starts immediately: narrow brick houses, enormous windows, trees hanging over the water, bikes chained to anything that will hold one, bridges everywhere. Some of the houses lean enough that in another city you would call someone. Here they just make the street better.

- Editorial status: unmarked
- Editorial placement: published

Give the obvious Amsterdam its time. Walk the canal ring slowly. Spui is lovely; Noordermarkt is better when something is actually happening there; Museumplein gives the big institutions enough space to breathe; Dam is chaotic and useful and has the Koninklijk Paleis sitting right on it. Go inside the palace when it is open. Give the Rijksmuseum a proper chunk of the day. Van Gogh too, if you care about Van Gogh. Moco depends on what is showing.

Tuschinski is the one that catches people off guard. It is still a normal cinema, except the normal cinema has stained glass, heavy carpet, carved wood, lamps everywhere and the sort of 1920s decoration that now looks completely insane because nobody would spend the money to build it again. Go see it even if the film is shit.

You can do all of this for a few days and have an excellent trip. The canals alone are enough to keep producing stupidly beautiful little scenes: a boat under a bridge, three crooked houses reflected in the water, somebody cycling past with flowers sticking out of the front basket, warm windows at dusk.

### Then the water starts getting in the way.

- Editorial status: unmarked
- Editorial placement: published

You want to go somewhere and there is a canal between you and it. Then another. You start recognizing bridges, using the Amstel to orient yourself, realizing that the IJ behind Centraal is much wider than the little waterways you have been walking around all day.

### THE WATERWAYS

- Editorial status: unmarked
- Editorial placement: published

The canal ring is only part of Amsterdam’s water. Smaller canals cut across it, the Amstel runs through the city, and the IJ opens up behind Centraal toward the harbour. The old canal system handled drainage, transport, trade and the expansion of the city at the same time. Ferries still cross the IJ all day, and some streets and squares sit where water used to be.

Mokumboot is the quickest way to understand the canals without understanding anything technical about them. Rent one of the little electric boats and drive it yourself. Pick a direction. Miss the turn. Reverse awkwardly while everyone gives advice. Work out which bridges you fit under. Let the passengers open another beer. After a couple of hours at water level the canals feel less like the thing you came to photograph and more like streets you happen to be floating through.

### The bike finishes the job.

Amsterdam gets much smaller on one. De Pijp, Jordaan, Oud-West, Oost, Plantage, these names look like separate areas on a map and then somebody tells you dinner is twelve minutes away. People cycle to work, to the supermarket, to somebody’s house, to restaurants, to clubs. Good coat, bad rain, groceries, flowers, child on the front, another child on the back. Whatever needs to move gets moved.

That lack of ceremony is everywhere. Vondelpark is beautiful and gets absolutely used. People run through it, cycle across it, lie around for hours when the weather is even vaguely decent. The canal edges fill up. Terraces fill up. Boats fill up. Amsterdam has all this absurdly precious-looking scenery and the people living in it treat it like normal public space, which is exactly why it feels alive.

There are a ridiculous number of extremely cool people here, and very few of them seem desperate for you to know it.

- Editorial status: unmarked
- Editorial placement: published

People dress well, know very specific music, work strange jobs, have friends from everywhere, disappear to play a set somewhere on Thursday and still show up at an office on Friday morning. Someone can look completely outrageous and be the least performative person at the table. Someone can work in commodities and know more about techno than you. Someone moved here for school, stayed six years and now has a friend group where nobody seems to have the same passport.

There is also very little fuss around difference. Gay, straight, Dutch, Mexican, Turkish, Surinamese, British, rich, broke, designer, waiter, trader, DJ, people get on with it. The reaction to someone being unusual is often so small it barely qualifies as a reaction.

Chinese sailors started settling around the old port in the early twentieth century, and the Chinatown around Zeedijk, Geldersekade and Nieuwmarkt grew from there. Nam Kee has been on Zeedijk since 1981. Cantonese, direct, deeply part of the street. It became famous enough in Dutch culture that Kees van Beijnum named a novel De Oesters van Nam Kee after it, which later became a film. That is a very good kind of restaurant fame: not a reservation frenzy, just a place becoming part of how a city talks about itself.

After a while the division between Dutch Amsterdam and international Amsterdam starts looking slightly silly. Tacoteca is Amsterdam. Nam Kee is Amsterdam. Mangia is Amsterdam. Zoku full of people from everywhere is Amsterdam. The fact that all of these people and places came from somewhere else does not make the city less Dutch; it is part of what Dutch Amsterdam looks like now.

Salmuera is on Rozengracht, with Latin American food and a mezcal list serious enough that somebody at the table will eventually start ordering things for everyone. The building has a long history as a drinking place, which feels appropriate. Get dinner, get mezcal, stay longer than planned.

Pesca is completely different. You get up, walk over to the fish counter, see what came in, choose what you want and talk through how it should be cooked. Meanwhile other tables are doing the same thing, staff are moving fish in one direction and plates in another, people are standing, sitting, ordering, going back for something else. It is a restaurant where the operation is visible, and when it is full there is a lot going on.

The IJ opens up properly. The tight canal streets disappear behind you. Noord has bigger buildings, former industrial land, shipyard scale, newer housing and much more empty space between things. Turn around and Centraal is still right there, which makes the whole jump feel slightly ridiculous.

Paradiso and Melkweg are institutions, but the useful advice is to check the calendar. Paradiso is the old church; Melkweg grew out of a former milk factory. A famous building with nothing you want to hear that night is still nothing you want to hear that night.

Amsterdam’s electronic-music culture is much bigger than a list of clubs anyway. Promoters, DJs, queer communities, regulars, temporary venues, people who know exactly which night matters and people who heard about it two hours ago are all moving through the same city. And because everyone has a bike, “all the way out there” keeps turning out to mean twenty-five minutes.

### DE SCHOOL

De School closed in January 2024. It occupied a former technical school and had a club, restaurant, café, exhibitions, concerts, a garden and other programming under the same roof. People still talk about it constantly.

That matters because Amsterdam nightlife has memory. Places close, people move, promoters end up elsewhere, another building starts hosting the night everybody is talking about. The map never really freezes.
